Brewed this last weekend, which is a slight twist on Greg Hughes recipe

Due to various duties, I left the mash for three hours, then fly sparged into the boiler. As I was busy, I knew I'd come up with a short length because I was using rough volumes at the beginning, so I had to top up to 23-ish litres with cold water. Overshot OG and ended up with 1.058. Fermentation appeared pretty vigorous. Gravity check after 7 days, was down to 1.020 so dropped a big (well, 122g) dry hop in - recent research has pointed to dry hopping at around 1.020 or below so I'm trying this for the first time.

quick update: down to 1.010 now, meaning I'm looking at a 6.3% beer. raising temp to 22 degrees to ensure diacetyl is sorted then crash chill around wednesday and keg on friday
