I'm on a roll now, and had a Friday night brew day last night.

I brewed an India Pale Ale that is very loosely based on Goose Island IPA. I read so many different forum recipe threads for this brew, in the end I took bits of inspiration from them all and came up with this recipe below.

I was aiming for 23L @1.060 OG, but ended up with 23.5L @1.058 OG, so fairly happy with that.

I think that I should have dropped my Brewhouse efficiency a bit more in BrewMate to account for the extra little bit of liquor that I added, as I thought that the hop's would have soaked a bit more wort than they did.

I got my mash on at 6.30pm, but I was still faffing around tidying up at 1am, as my brew seemed to take ages to cool down for some reason. #-o

I definitely think that my pH meter electrode is knackered, as I tried a new 9V battery in it, but I still wasn't able to calibrate it at 4 & 7, so I don't know what my mash pH was again.

I've attached a few pictures from last night and I'm just waiting for the brew to kick into life now.

Maybe in a couple of month's old mate, this one will need a bit of conditioning I think :)

The gravity is stable at 1.013, thought it was 1.012, but once the hydrometer had settled it had risen slightly in the jar. That's a solid 6% then :=P

It's currently getting some crash cooling before bottling later this weekend.

Now to plan an old style Porter brew!

How did this brew turn out for you in the end?
Did it need long to condition?

Hi Barny,

I had a bottle after 2 weeks and it was drinkable, but wasn't fully carbed, but tasted ok.

I will crack another one open at the weekend and report back with a picture.

Evening MB, so how was the weekend sample?
I'm thinking of making this in the next week or so as it looks nice.
Would you go for the same amount of hops if swapping to pellet hops instead of leaf hops for the 60m and 5m additions?

Well, it has surprised me with how drinkable it is to be honest.

It's well carbed, has no off flavours or alcohol heat present.

It's fairly low on aroma, but the hop flavours are very nice and balanced IMO - earthy, piney and floral.

The beer has a nice medium body with enough malt sweetness to keep everything in check.

It's not quite as dark as in my picture, but I'd say it's a pale amber.

Really quite pleased overall, and a nice change from a citrus burst IPA.

I think i'm going to make something just like this. Can't get Centennial at the moment from my supplier so will sub Cascade and add an extra 5g.
