Hydes dark ale-GW

Just knocked up a batch of Hydes dark ale from Wheelers book thought I would add a bit of soft brown sugar to give it a bit more abv- However, it's been awhile since I did an extract brew after pouring the wort into the FV let the filter bag drain -then put it in the sink! forgot to sparge it, immediately knew I'd done wrong, but as the sink hadn't been sanitized there was No way it was being taken out and used. All that lovely wort wasted. luckily the OG was 1032-1031 in the book, so it should turn out as original recipe, I hope. Unless there is something I've missed.

You boil the wort after sparging so why is sanitation a problem?

Maybe the term sparging is misleading. I strain my slightly cooled- boiled wort(10ltrs) through a mesh bag to remove the hops, then I normally put the mesh bag in a sanitized bucket and Flush it with boiled water to extract the "sugars" left in the mesh bag then add it to the wort then top the FV up to 20lts with water.
