BIAB #16 - Celebration American IPA

Post by john_drummer » Sun Nov 11, 2012 7:26 pm

I downloaded a recipe from www.brewmate.net, called "Dirty Celebration Ale" and I thought I'd have a go at it; couldn't get Nugget hops at my LHBS so I swapped that for Chinook; same with some of the grains.

Here's my version of the recipe, hope it turns out as good as it smelled coming out of the boiler...

21L batch, 1056 planned OG, Bitterness 67.1 IBU, colour 14.9 EBU at planned efficiency of 70% (although I know from previous batches mine is nearer 67%)

Pale Ale malt - 3840g
Munich malt - 879g
Caramalt - 210g
Carahell - 124g
Wheat malt - 210g
crystal malt - 30g (user-upper)

Chinook - 20g 60mins
Cascade - 17g 15mins
Centennial - 17g 15mins
Amarillo - 17g 15 mins
Cascade - 17g 5mins
Centennial - 17g 5mins
Amarillo - 17g 5 mins
Cascade - 17g 0mins
Centennial - 17g 0mins
Amarillo - 17g 0mins

Irish Moss - 3g 15mins

Safale US05 yeast

Actual OG 1052, 19L into the FV after losses.
Efficiency probably even lower than 67%

and now we wait...

Gravity down to 1012 now, hasn't moved for 2 days so probably time to rack it into secondary & add some finings.

perhaps this should be in the "Recipes" bit?

This looks like it will turn out to be an absolute cracker!!

I did a sierra nevada celebration ale a few years back with a similar recipe and it was one of those beers I will never forget. I dry hopped mine with chinook pellets and it was a fookin beauty! I am droolin all over my keyboard just thinking about it!

Enjoy JD!!

I've had a couple of sample tastes from the hydrometer trial jar. very nice, very nice indeed.

I've got a boil on right now for a porter recipe I've developed, but once that's in the FV I'l be racking the Celebration AIPA into secondary - still at 1012 so it's clearly finished

FWIW I bottled this 25th November & I'm now waiting... always waiting... just waiting.

I'm already thinking about summer ales, and wouldn't mind doing a hoppy American IPA.... can't wait to find out it tastes.

The hop schedule alone is making me want to brew this recipe! Keep us posted :)

'tis very very nice. but some bottles just not carbing up, others slowly getting there. Tempted to open em all up (remaining 20 or so bottles) and re-prime then start again. Just done one of them in the last 10 mins, I'll keep it next to the radiator for a couple of weeks.

Glad it turned out nice, that's giving me the incentive to do one for myself.... all the new American hop varieties seem to be twice the price of the traditional English hops though!

I have the opposite problem to you where all my kegged or bottled beer seems to be over carbed!

I notice that one of the online retailers has new stock of Chinook, Centennial and Amarillo. I have a feeling my next brew will be leaning towards some of these :)

I have just ordered a 100g pack of each of these American hops, they are a bit pricey but I can't wait to see how the IPA tastes with them. Will probably get brewing in a couple of weeks and have some ready for tasting by the end of February.... that seems like a very long time to wait!

Despite adverse weather conditions my hops have arrived! I will do a write up of my American IPA brew day and post it probably towards the end of the month :D

well the celebration ale was lovely, but I must have forgotten the priming sugar as nearly every single bottle was as flat as a flat thing that a pancake could spit over.

So today I took advantage of an unexpected day off - car broke down :-( - to brew it again. Had to tweak the recipe slightly as I didn't have the full 800+g of Munich Malt and no car meant no getting any more.
Then just as I was half way through the boil, the garage phoned to say the car was fixed :-)

19L in the FV at OG 1054, Safale US05 yeast.

MUST REMEMBER TO ADD SUGAR TO BOTTLES BEFORE CAPPING

I strongly recommend batch priming. It's easier and will give far more consistent results.

I used to do batch priming, I have no idea why I stopped doing it that way.
