I do a 2 vessel system and have been doing it for some years now. I have an old cool box that I mash in, this holds the temp for 90 mins with no real problems at all. I use my 50l pot as a HLT and a boiler. The only bit which is at all complicated is the sparge, I lift the bag out of the mash tun and put it in a bucket then top the bucket up with the sparge water, let it sit a bit then squeeze it out. this wort is then poured into the mash tun along with the first lot. The bag of grain goes back into the bucket and the process is repeated until all the sparge water has been used. I then jug the wort back into the pot, chuck the bittering hops in and get it onto the gas (stove). I usually put it on the stove whilst the last sparge is sitting as it reduces the weight that I have to lift.
To keep things simple, I use a sheet of net curtain from Boyes rather than a bag, easy to clean. I think I've made over 20 brews with the same net.
