just wonder if I could save this amount and keep using it

If you can dump it into a water butt and reuse it for the next batch of coolant.
You should be planning on using 10x the batch size of coolant water to get hot wort down to pitch temp, if using an efficient immersion cooler. You may need to finish the job with water sourced from an ice bath

What batch size?
What cooling method?
What temp is the cooling water etc etc?
I just collect the run-off when it is still quite hot to use for cleaning up afterwards.

With an efficient immersion chiller you shouldn't need more than two to three times the batch size,mine uses 10 to 15 gallons depending on the time of year. Collect the hot water and use it to wash all your brewing equipment.
