so how I could spice it up a bit

A good way to get a massive hop profile is to use an early addition to get the majority of your IBUs and then nothing ealier than 10 mins from end of boil.
This does require more hops but if you like hoppy beers then this is a good method but I would dial back the IBUs as lots of hops can increase the perceived bitterness.
A small speciality grain can add interest and my favourite at the moment is rye.

5% is enough to notice it but some people have been happy with much more. I stick to 5-10%.

Thanks. Many years ago I did a series of brews using a bit of amber malt, increasing with each brew until I found my limit. Last month I did a Pale Malt with 6% amber & 1% black which turned out great (if you like amber - dry, coffee edge).
