Dispensing from a PB by gravity

Dispensing beer for a wedding party.. mine.. tomorrow.

I am torn between taking the lids off the PBs and dispensing with gravity, or dispensing under pressure. It will all be sunk in one day.

My concern around dispensing under pressure is the amount of foam that will be generated by people who won't be able to control it, and people won't know what to do when the pressure drops off.

If it's all being drunk in one day, I don't see a problem with gravity dispense.

I did this a few years a go at a house party I was hosting. I just partly unscrewed the lids of the PB's whilst making sure that they remained on (enough for gravity to do its job). Some still had relative carbonation the next day.

I agree that gravity will be far easier for novices to deal with, and theres no need for CO2 if it is all being drunk that quickly, so I'd also go with the simple loose cap. Even regulated gas supplies can give trouble if the temperature of the beer varies.
