Big Ooooops I think.......!

Post by WalesAles » Sat Jul 27, 2013 10:46 pm

Hello Everyone,
Everyone in my house gone out tonight so I was sitting there bored, bored, bloody bored. Then I thought `I`ve got a Sundew in the front room, I`m going to brew!` MTV Classic Rock on loud (yes I`ve had a couple of TC`s and Cloudy Simply bitter by now, what could go wrong?) My last Tweaked Sundew came out at 6% and it was Bloody lovely mun! So I made another one, only this time I didn`t read my notes and went from memory, Big Ooooops!

Sundew 2 can kit
500gr LME
1 bottle Golden Syrup 454gr
250gr brewing sugar
25gr Summit hops 5min boil
Made to 20 Lts
OG at 21deg 1064.
1064 WTF! I checked it 4 times with different samples and they all said `1064 You Silly Person, Don`t make beer when you`re having fun and dancing like a Dad around the Kitchen when there is no-one there to tell you stop being an arse`. Oooooops! :D :D :D

That's gonna be rocket fuel, what's the potential ABV for 1064, something like a barley wine I think.

If he gets around 75% yeast attenuation (1.064-1.016), he will end up with a 6.5% strong pale ale.

FV:

Conditioning:
AG#41 - Vienna Lager - 5.6%
AG#42 - Heritage Double Ale - 10.5%

On Tap:
AG#44 - Harvest ESB - 5.4%
AG#45 - Amarillo Gold APA - 5.2%

I couldn't cope with anything that strong 5.5% is my absolute max I'm afraid.

I think I'd just use less fermentables to start with. What is the Sundew like untweaked and what would be good additions to keep it round the 5% to 5.5% mark?

A bit boring to be honest.

I'm currently brewing 1 can to 11.5L with some NZ Cascade.

That's not a bad idea, 1 can to half the length equals 2 different tweaks!

Hello Everyone,
The Big Ooooops is down to 1010, bottling tomorrow. 25gr Summit hops dry hop for 7 days, smells lovely! Can`t wait, this might be an easy drinking swigging ale, (or not).
Nothing ventured, nothing gained! Let`s see what happens! YeeeHaaaah! Mrs Ales watching me again, she said `Why is one of your eyes shut tight and your neck at that strange angle again?`. No need to answer her because you all know what Homebrew does to your sight and typing skills!

Hello Everyone,
Bottled this today. Oh me, Oh My, this is not a Beer for drinking, it`s a Beer for laying down and avoiding! The smells and tastes are absolutely fantastic! Strong as hell, warming my chest just tasting half a pint! Look out in 4 weeks time then as Ditch says `I can get amongst it`! :pink:
