I've pimped this kit with a 15g dry hop of East Kent Goldings and 1kg of Medium DME. Certainly improved, without overdoing it.

Re: coopers english bitter
I have vague recollections of brewing this kit maybe eight or nine years ago and my memory tells me it was an Australian's idea of how English bitter should taste rather than an example of an authentic English bitter. It certainly needed extra hops so alexlark's suggestion will hopefully improve the brew.

You can't go wrong with EKG.
My current drop is a bitter that used amber dme. It turned out a bit darker than I prefer, but tastes great.
I'm just here for the beer.
