from a ribena wine recipe I followed, i waited about 2 weeks after fermentation had stopped. I then added some stabliser, left 2 days, then finings (only because I had some, and in my experience using them at this stage significantly reduces the sediment once bottled.

i then bottled in wine bottles, and stuck to one side....had a bottle about a week after making and it was nice..potent but nice. i'm hoping the rest will mellow out as it qas quite boozy.
