I'm planning a batch of Rhubarb wine in the next couple of days

Just a bookmark, I froze a few kilos earlier in the year so need to do something with them

For 1 gallon;
3lb Rhubarb
3lb Sugar
White grape concentrate - optional, but does give a slightly smoother wine. I rarely bother though (+ you'll have to lower the amount of sugar to compensate)
Yeast & nutrient
Chop the rhubarb into small pieces (don't bother peeling it)
Bung it into a (sterilised) bucket and pour the sugar over.
Leave overnight and give it a stir the next morning to check that all the sugar has dissolved. If it hasn't, leave it for a few hours longer
Strain the juice off into a demijohn, rinsing the rhubarb a few times with water until the demijohn is full (I split it into 2 to start with to allow for foam)
Check SG, it should be around 1.090 for a 12% wine
Add yeast & nutrient
Job done!
It's one of the easiest wines to make and is generally very nice, though will benefit from maturing for 9 months to a year after fermentation has finished.
