Too long in primary?

Post by floydmeddler » Fri Aug 19, 2016 9:36 am

Hi folks,

I've left a wine in primary fermentation for 6 and a half weeks. It's in a tight fermenter with an airlock so no probs with oxygen ir infections settling in.

I've done this with beers many a times and have had no problems. Is wine any different? A bit of googling has suggested that one shouldn't do this with wine!! Should I continue with this batch or should I tip it? Can rack today.

Cheers!

I leave mine in for this long and sometimes longer if you include the finings and racking off time.

The beverdale kits I do come out great this way.

I'll second that. I leave my wine in the primary until it's completely finished (between 3wks and a couple of months depending on what it is) then rack it off the sediment after that.

It seems to age/mature quicker in the FV.

I just keep it dark and in a controlled temp environment.

Cheers folks! What I was hoping to hear. It's in a dark temp controlled fridge so all is good. :-)

floyd,
How do you know the light is off in the fridge? It might NOT be dark! :D

He could get in the fridge and close the door behind him?
