Good day all. I have started on making my first brew. It's a 30 bottle Beaverdale Pinot Grigio. Started it on Sunday night and it's merrily bubbling away. Now, the instructions say on day 5 to check the gravity to see if it's down to 90-996. Will it do any harm at all leaving longer than 5 days to check. Also when I do my transfer to my second vessel approx how long should it take in there before I can bottle it? I have read the instructions but would happily take any advice from people who have made these kits before.

Times quoted on kits are almost always optimistic.
I'd be surprised if it got that low after just 5 days, unless it's been fermented at a higher temperature than is ideal.
Give it at least a week before taking a gravity reading. Leaving it a full month wouldn't hurt!
Every time you open it up to take a reading, you risk infection. Leave the stuff alone as far as possible - wait until it stops bubbling before bothering to mess with it.

Ok, thanks for the advice. I have noticed that the bubbling is not as vigorous or frequent this morning so I will leave a few more days.
