Saving/Reusing wild yeast

Post by mickgall » Tue Jul 25, 2017 7:38 pm

Hi all, I'm just about to rack off a batch of strawberry wine, which I let do a wild yeast ferment. If it's ok I'm hoping to reuse the yeast, any ideas how best to store the yeast until I'm ready to use it.

I've never stored wine yeast for reuse, but beer yeast is best stored under beer (a yeast deposit in the bottle is a common source). If you want to harvest and store yeast (with wine I guess it will be from the bottom of the fermenter) you can store it in the fridge under either a cover of beer or distilled water.

Whether the above translates to wine yeast I couldn't say.
