Apple & Mango TC

Started this last week on the 24th. Was going to brew a partial mash beer and ran out of evening.... so put this together instead.

apple and mango TC

146g sugar
1 tsp nutrient
2 teabag steepd in a mug
500ml leftover Apple/Pear
3 l apple and mango
1 litre rubicon mango

pitched a starter I made to reuse some 3068 Bavarian Hefeweizen yeast.

Very much mango at all times... during ferment and now when it looks nearly done.

Ferment proceeded clean.

Looks really grim though! Smells very much of mango. Eldest said it smelt of ham. not sure I get that...

SG now down to 998:

It takes ages to drop clear. It will still be a nice drink if you like cloudy! :D

Tasted it tonight after 24 hours in fridge. Very mango. Very dry though..

I think this is going to be OK.

It won't drop clear though. The hefe yeast is very fine and takes months to drop... The style of beer calls for the yeast to be in suspension. So with this TC I will just drink cloudt and enjoy. Hope I can get most of the mango pulp out when bottling.
