Is cider yeast similar to ale yeast in that it will be cleaner when fermented at lower temperatures and fruitier at higher temperatures?
I am about to start a cider kit using Young's cider yeast, and would normally ferment at 18 degrees but was just wondering what everyone else's thoughts are?
Cheers

Re: Fermentation Temperature
What is the temperature range for this yeast?
I've never used actual cider yeast, but have done ale yeast at 68f and lager yeast at 52f.

I'm just here for the beer.

Re: Fermentation Temperature
According to Young's website "....It is a very low foaming strain that will ferment between 10 - 35°C, adhering to the ideal fermentation for cider; measured and steady. The flavour characteristics confered by this strain are neutral and clean..."Rookie wrote:What is the temperature range for this yeast?
I can imagine 10 to maybe 20 degrees producing a clean cider, but not sure about 35 degrees! Maybe it's worthy of an experiment......
