2nd cider of autumn

Post by lord groan » Fri Aug 25, 2017 8:17 pm

Well the apples continue to fall and the blackberries ripen so;
50l loose windfall apples gave approx 30l pulp which gave 15l juice, add 3 campden tablets and 3 tsp pectolase.
After 2 days I racked my 1st cider of autumn and used 300ml of yeast sludge from that to begin fermenting this one. Next day Simmer 1.1kg blackberries in 500ml water for 30 mins, strained to give 1.2l juice. juice added to cider.
Today 25-8-17 fermentation done, after 2 days gravity down to 0.995, thats going to be so dry it'll grow fur on my teeth.
I haven't tasted either yet but the first has a lovely pinkish glow given to it by the discovery apples, the second is still very cloudy but again is a glorious colour.

pics!
first shows the two ciders, the top one is the 1st brew after racking, with a really pinkish tinge caused by the redskinned apples I used, the lower one, still fermenting is the same mix of apples as the top one but with 1.2l blacberry juice added
