Recommend a cyser recipe?

I've not been brewing for quite a while thanks to the other stuff that life chucks one's way, but having got on top of a fair bit of that my son and I managed to get a faux Tanglefoot brewed last weekend and we're attempting a "small beer" version (tentatively named "Tangletoes") as well, though I suspect it may end up rather pale.

Anyhow, I have hundreds of pounds of honey that I harvested this year and many gallons of apple juice pressed from our own apples so a cyser is really begging to be made. Never having done one before, I'm looking for a recipe recommendation that's relatively straightforward and likely to come out well. Would anyone care to suggest a good place to start?

Must be the day for stuff that doesn't play nicely yeast... Blimey.

As a fellow beekeeper I have tried mead, never a cyser. Did try a hopped mead. And "Old Joe's spiced" is fantastic.

Apples make very good white wine with a little help from elderflower.

Be careful, honey and yeast don't play well together. And honey normally wins.

In my time I have brewed lots of stuff I don't drink. I have stopped that now.

What do you drink? Why not make that with some honey?

I like to experiment. Straight mead is already sorted, but since I'm firing up the honey warming cabinet to use for the fermentation (my usual fernentation cabinet being full of beer and likely to remain that way for a while) it seemed a good plan to put more than one demijohn in and try a few different things, so I'm also attempting a blackberry melomel for instance.
