How did they create that smell the beer had?

No, I haven't brewed this one. (yet) I'll have to try it soon I think

I'd love to know how to create that unique smell of Ward's best bitter.
Anyone got any suggestions? maybe it was the yeast

Wards was an excellent pint, but if it wasn't looked after it was bloody awful! :shock: I would love a recipe for this one :wink:

Anyone know the yeast strain of this beer?
My uncle said Wards Best Bitter was fighting beer!!
Once drank, it fought to get out of your arsehole!!

Might try the Wards brew, What is maltose syrup, can I replace it with somthing else?

Time to bring this topic back up from the depths as I am looking for a Wards Sheffield Best Bitter clone recipe. Anyone have any nuggets of truth about the original recipe and the yeast strain? Crying shame that they closed this one down in order to build more flats. [-X

Tried a pint of Wards in Sunderland a couple of days ago. I agree - doesn't taste like if used to. Went to university in Sheffield in the 80s. Remember th e brewery and a very good visit!

I'd hypothesize the smell was mainly produced by the unique fermentation and the minerals in the local water supply. I've seen three Wards Best Bitter recipes and they all contain Aciduated/Enzymatic Malt, which I'm pretty sure contains probiotics like acidophilus and lactobacillus, as in yogurt, kim chee, Berliner weiss, lambic, sourkraut, etc. That would absolutely produce some interesting sourish smells unlike mainstream English ale fermentations.

Those statements would back-up my hypothesis. The same aforementioned bacterium are sold in probiotic pill form to aid with digestion.

Did you guys know the historic Vaux/Wards English ale strain is supposedly still in use by Maxim brewery? I seriously doubt it's still managed as a triple-strain though. If you could get their yeast, I'd primary ferment with that, then add some probiotics to the secondary.

I think its possible to get the strain from Brewlab..

however to get that smell will take a bit of trial and error...by the way its pronounced WHARHHRDS.
