Bath Ales: Gem

Hi folks,

For my very first recipe I wish to do a Gem clone. Any ideas?

Tis a nice pint, Gem, well balanced.

Website says Maris Otter, some wheat and East Kent Goldings.

Could try something like 4.7kg pale malt (MO if you can get it) and 100g wheat malt. EKG to about 25-30 IBU for bittering and a good English ale yeast (something not too attenuative).
Next Up : Something for the summer
Primary : Nothing
Secondary / Conditioning : Nothing
Drinking : Mosaic IPA

hehe I think you might have to spell it out for me seeing as this is the first time i've ever brewed anything.

What is EKG? What is IBU (hops?)? What yeast would you recommend? And what size batch would 4.7kg and 100g of wheat malt produce? I aim to do 5G batches.

EKG is East Kent Goldings, IBU is a measurement of bitterness.
Do you have any brewing software, Paul?

As to yeast, probably just try Nottingham or S-04.

I personally use BeerTools Pro, but there are loads of others like ProMash and Beer Alchemy.

Just been looking on Barley Bottom and EKG is out of stock for a fair while. Any ideas where else I might get it?

If your efficiency is circa 75%, the above grain bill will get you to circa 5% ABV.

If you order the EKGs from Hop and Grape here @ 4.7 AA, then the following hop schedule will get you to 30 IBU … adding what has already been suggested …

Maris Otter 4.7 kg
Wheat Malt 100g
EKG 40g full boil
EKG 30g last 10 mins
Yeast Safale S-04

In any case, If you can't get East Kent, ordinary Goldings would be very close.

Recipe from Norman posted here.

Presume this is for the draught version (lower gravity). Includes crystal and a smidgen of chocolate malt. Makes sense as its definitely got a bit of colour and body to it (more than I'd expect from pale malt alone), despite those ingredients not being listed on their website.

Also uses Challenger for bittering, Goldings for flavour. Sounds plausible, but you won't go wrong if you used Matt's all Goldings hop schedule.

When Norm Says CHOCOLATE MALT LOW.
What does he mean. is that a specialist malt of is it low quantities of Chocolate malt?

Maybe pale chocolate malt?, its a less intense flavored and colored version of chocolate malt

I'd just use 30g of ordinary choc malt instead, it can only lend a hint.

IMHO any stab at a recipe, or an almanac recipe will only get you in the ballpark.
