AG #1 (Hop 'n' Jump)
I am almost ready to brew my first ever All Grain brew and have found a recipe called Hop 'n' Jump and just wanted to clarify something.
The recipe
Grist
3.2kg Pale Malt (Going with Maris Otter)
220g Amber Malt
Bittering Hops
12g Cascade
9 g Bobek
Second Hops Added 10 mins before end of boil
5g Cascade
4g Bobek
Aroma Hops
20g Goldings
9g Cascade
11g Bobek
The question
Obviousely the bittering is added at beginning of boil the second 10 mins before end so all I want to know is when to add the Aroma hops and any finings
Rob at Malt miller.co.uk advised me to use Protofloc and S04 Yeast

the aroma hops are the 10 minute addition, and the finings( protofloc) are added at 15 minutes before then end of the boil.

It's very lightly hopped for an ale which has "hop" in its name.

The protafloc are Irish moss tablets, add one to the boil at 15 mins from the end. Dont worry about finings yet, they are for clearing your beer when it is kegged and not necessary if your bottling.

...which would suggest the '10min addition' and 'aroma' hops are added at the same time. Somehow, I don't think that was the intention. From what I can gather I add the Aroma Hops once the boild has stopped so basically a 3rd Hop Drop

Do I have to sterilise the mash tun/boiler or just everything I use after the boil process??

hi
just sterilise anything that will come into contact with the wort post boil. the boil itself will kill any nasties.

So far as far as I can tell everything is going to plan.
We weighed out all the ingredients needed for the mash and heated up the mash tun before adding the liquor and the grain which was then left for 90mins.
We then sparged the grist whch took longer than expected and we are currently in the middle of the boil.
I am using the Lidl boiler which whilst does a rolling boil (now I've adapted it) it doesn't do this vigourously as you can see by clicking on the Boil link below. Will this be a problem.

perhaps the boil isn't quite as vigorous as you would like but having looked at the link i would think it would be sufficient. you may also find that towards the end of the boil when some evaporation has occured that the boil vigor increases.
the acid test for such things is always the quality of the beer! if your beer is fine then don't worry about anything!

I generally hop at 90 minutes (bittering) then 20 or 15 or 10 minutes (depends on the beer and hop and, most crucially, when I actually remember to bung in the flavour hops

Whatever you do it will probably turn out OK. Just remember the main bittering comes from the 90 minute addition then it all depends on how hoppy you want the beer and what hops you're using as to when and how much you add of the flavour\aroma hops

P.S I also chuck the bittering hops into the copper pre-run off rather than wait for the boil to reach a rolling boil. Works for me as I'm lazy and easily forget things

The beer is fermenting away happily at the moment but when I got in from work late last night I went to check on the bucket and found about 20 small flies trying to get into the bucket, which is sealed so they can't.
I have never noticed the flies before so they must be attracted by the smell.
Will this be a problem and is there anything I should do?

As all flies are basically little bacteria mopping flying pieces of sh*t, I would suggest you stop the flies from entering your beer. Sorry if I'm just stating the obvious but really that's all you can do.
Maybe you could move the beer to an enclosed area such as a cupboard?
