Sleighed Again - My Xmas Ale (Advice Please)

Post by rimski » Tue Sep 14, 2010 8:28 am

I am planning on brewing the following recipe so it is ready for Christmas.

Will the additions be enough or should I up them slightly, I want it to have that subtle smell of Christmas Cake as opposed to actually tasting like one too much

Sleighed Again

4.750kg Maris Otter Malt
200g Wheat Malt
170g Chocolate
170g Crystal 60

60g Cascade (5.5% Alpha) @ 60 Minutes (Boil)

5g All Spice @ 10 Minutes (Boil)
3 x Cinnamon Sticks @ 10 Minutes (Boil)
5g Nutmeg @ 10 Minutes (Boil)

Single step Infusion at 66°C for 90 Minutes. Boil for 60 Minutes

Fermented at 21°C with Safale US-05

Original Gravity (OG): 1.053
Colour (SRM): 16.2
Bitterness (IBU): 31.3

Looks great, i was discussing just last night with my father in law what impact adding a bit of cinimon/all spice to a brew would have?

Anyone done it before?

Does it add a nice hint of flavour or smell, or just spoil a good beer?
I am not a Beer expert.....thats exactly the point.

As you might expect, it adds a slight mulled wine taste. Unless you put loads in it's not that noticable (except for cloves which can be overpowering). Whether you like it or not depends on how much you like the idea of mulled ale!
