Dark Star Revelation - FACT based takedown!

Wow. Simply Wow.

The most amazing beer i've drunk in years, superb, massively hoppy but without being to bitter or two one dimensional.

I want to try and create a recipe to brew it, these are the "facts" i've been able to get of their website
- 5.7%ABV,
- Chico yeast strain (so US05 will be fine)
- Uses Maris Otter, no mention of other malts...maybe 100% MO? seemed lighter than say a Fullers ESB to me which is 10% crystal.

HOPS
"Oh yes – we’re heading for 50 IBU’s with a clean bittering hop added at 3 stages. There will then be 3 aroma additions in the brew"
"There will then be 3 aroma additions in the brew. A blend of Centennial, Liberty, Cascade, and Citra aroma hops by the sack full" – then dry hopped during conditioning using our ‘Hoptimizer’ "
So
- 50 IBU, probably Magnum as the clean bittering hop? added 3 times, so 60mins, 45mins, 30mins?
- 3 aroma hop additions in the boil, maybe 10mins, 5mins, 0mins and then whirlpool?
– Dry Hopped with the aroma hops

Any other thoughts?

I'm off to make a recipe for the above

23lts 73% efficiency
OG 1057, FG 1012
2 pkts of US05

5.2kg Maris Otter
400g Caramalt

Boil - 48IBU
60mins Magnum 15g
45mins Magnum 15g
30mins Magnum 15g

Aroma
A mix of Centennial, Liberty, Cascade, and Citra
50g 10minutes
50g 5minutes
70g 0 minutes (80c)
Whirlpool for 20mins
70g Dry Hops after 7 days

What do people reckon? Enough hops? Right Malt?

So Darkstar have confirmed on twitter its 100% Maris Otter, no crystal or caramalt......

I'm trying to get some hints on what and when the aroma hops are. Fantastic that they are happy to help and provide info to homebrewers.

Ill raise a pint to them. This beer blows the socks off Jaipur in my mind.

Right more from Darkstar on this via twitter.

So....i reckon that pretty much gets us there. I think aroma hops will be down to what they can source at the time, a challenge for us homebrewers too.

I'll adjust my recipe and then try and get brewing in the next few weeks once the building work is done.

Darkstar is one of my fave breweries and relatively local and even better we have a real ale shop nearby and the wife of the owner works there so their range is always in stock :grin:

Im sold, i have everything in stock so will gve this a try tomorrow, will go with 100% MO and follow the hop bill, hopefully turns out as good as it sounds.

I like the idea of this recipe but I'm getting hung up on the hop schedule. Citra will dominate followed by Cascade and the Liberty will be lost so I got to thinking a ratio of 3:2:1 Liberty,Cascade,Citra what do others think ?

The late additions get added at around the 90c mark and they dry hop for 3 days if that helps. I know that's what they do with Carafa Jade anyway. ;-)

Great dicussion here lads!

My brewery is out of action until the new year with building work going on so its going to be a while til I get to brew this, so anyone who has a go make sure you report back!

The aroma hops are different now, i'm guessing purely on availabilty. given that Cascade is very availble I figure that is still there, i know centenial and citra are both a nightmare to get so maybe they have had to cutback or sub those?

A mix of 23lts 73% efficiency
OG 1057, FG 1012
2 pkts of US05

5.2kg Maris Otter
400g Caramalt

Boil - 48IBU
60mins Magnum 15g
45mins Magnum 15g
30mins Magnum 15g

Aroma
A mix of 40g Citra, 80g Liberty, 60 g Centennial, 60g Cascade
50g 10minutes
50g 5minutes
70g 0 minutes (90°c, I ran Immersion cooler for 2 mins)
Whirlpool for 20mins
This is tucked away in the fermenting fridge at 20°C, I plan to dry hop for a couple of days, but not decided how much of the hop mix to use but will probably throw in the remaining 70g.
I will report back on how this ends up.
