Kernel brewery Pale Ale clone - does anyone have a recipe?

Post by jack_c » Sun Jan 18, 2015 7:26 pm

Hi,

I'm planning my first AG and would really like to make something similar to the Kernel's Pale Ale (been a fan on theirs for a few years). I've seen there's a clone recipe of their IPA around the internet (guessed from the grain bill and hop schedule seen on the video on the Kernel website), however, this is a touch to strong for me and their Pale Ale really hits the spot. Would also like to try a recipe someone else has had success with!

I understand that their Pale Ales are a variety depending on what hops are available (currently they have the following 3 Pale Ales : mosaic @ 5.2%; centennial, rakau, citra @ 5.5% and centennial, mosaic @ 5.5%), and would be happy with any hop combination as long as its within keeping.

I thought about trying to scale down the Double Citra IPA recipe but don't think I'll be able to guess the correct ratios to get something similar.

Can anyone help?

Cheers

Their pale ales have tradionally been 100% maris otter and heavily hopped (not sure about IBU but I would guess at least 50). You'll need lots of flameout hops and dry hop for three days with pellets.

Jack, do you have a copy of the Citra DIPA recipe?

Probably obvious, but I presume they haven't deviated from their use of US-05 in the two years since I asked about it.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

Sure thing, however I have found 3 variations. The Kernel website showed information for the Kernel Magnum/Centennial IPA, BrewUK user djavet inferred a recipe and BrewUK have made a Kernel Double Citra Recipe Pack, and there's also a brewgr.com Kernel Centennial IPA too...

*All* the information came from the BrewUK post http://www.brewuk.co.uk/forums/viewtopi ... =9&t=46401 - all credits to them!

Presumably not as the sludge is just as unsettled as ever - US05 doesn't like to pack down.

Looks great, I think I'll give it a go.

Has anyone got any thoughts about why the Kernel Ales are so cloudy? This isn't a bad thing, just wondering if it's because there's no fining agents added, or perhaps a slow, or no post boil chill?

the delta/chinook pale recipe was knocking around here based on someone's letters to the brewer, i picked it up there too. they tend to keep the basic malt and hop schedule the same as far as i can gather, and just vary the hop varieties. so essentially i'd work around that one based on which hops want using..

cloudiness? that'd be the US-05..
dazzled, doused in gin..

Lack of fining, and a heavy dry hopping.

I agree, plus wheat malt always contributes a bit more haze than an all-barley brew. From what I gather, they subscribe to the Alchemist Heady Topper IPA school of thought, where as long as it's uber-flavourful then haze and floaty bits aren't considered a bad thing...

They use US-05 apparently, and time is money! They obviously also subscribe to the 'clarity is over-rated' school of thought.

Kernel IPA is an all time favourite of mine. I've emailed them in the past and they said they use a house yeast and only use MO malt in their recipes as they're not a fan of sweetness in their pale ales.
