Long Lost Cornish Beers

Post by fego » Thu Feb 09, 2017 11:37 pm

I'm looking to brew a beer that the Cornish of the past would have enjoyed but we can no more.
Does anyone have any memories of anything they wish was still around and, perhaps, more poignantly, a recipe?

West Country White Ale, a lost English beer. I believe Stuart Howe, then of Sharp's, now of Harbour, brewed a White Ale. Might be worth dropping them an email or tweet...

Cheers,

Bob.
I like beer --- Currently rebuilding the brewery, this time with stainless...

Being Cornish born and bred and now exciled to Yahkshah, I can tell what not to brew: Tinners from 1980's Snozzle Ales. St Austell have come fantastically since those dark days when we called in Thinners!

Cheers... Fingar

I had a go at making Devon white ale once. I interpreted the "ripening" to be a form of sourdough starter, so fermented the beer with this. It did not go well. Better than my brother's attempt using wild yeast and herbs though, which mostly tasted of burnt rubber.

I have several pages of notes from researching it if anyone's interested, but here is the conclusion/recipe I came up with:
First the grout. Originally I was going to use just a sourdough starter, but having read about the lactobacillus in the grain I'm now going to mix some crushed malt into that and leave it somewhere warm for a few days. No egg.

Although one recipe (1850) mentions amber malt, I'm going to stick to the 100% pale used by the rest.

Due to the lack of references to spices I'm going to keep that simple, and to keep it really old-fashioned traditional I'm not going to use hops.

For 4.5L

850g Pale Malt
6.5L water at 73C
Mash at 70C for 90 mins
Boil for 20 mins
Add 1g Chamomile and 2g Coriander seed for the last 5 mins
Cool to 21C
Mix in grout
Leave to ferment

Expected OG: 1.041
Expected FG: 1.006
Expected ABV: 4.5%
As for the original question, I asked my step-dad if he had any favourite Cornish beers from the past but all he could come up with is HSD, which isn't exactly lost.
