Billb,
Asda do a 215gr jar of `Salted Caramel Sauce`.
This Brew sounds good.
Tomorrow I will be doing a Coopers Stout Kit with 2 jars of the Asda Sauce.

I'd be interested to hear how you get on with this.
I looked at using Carnation Caramel sauce (http://www.missmysupermarket.com/user/p ... 20397G.jpg) but when I looked at the ingredients there is a lot of fat in it (it's made from caramelised milk). So instead I went down the route of making my own caramel out of just sugar (and I made a nice banoffee pie with the caramel sauce!).

I bought some light demerera and it melts and turns into something very close to the middle of a crunchie bar. Totally different to the dark brown sugar i tried to use the first time which started smoking in the pan on anything above 2. I have not had a taste of mine yet but i am going to brew it again with the correct ingredients ready for xmas. You cant have enough stout.

"Can't have enough stout". Well said, couldn't agree more! :-)

Tesco sell a salted caramel extract that could work.

I assume this is what you mean: https://www.tesco.com/groceries/en-GB/p ... /289599620

This is interesting because it contains no sugar. Just caramel colour (E150a) and salt.

If you look in Ron Pattinson's "Home Brewer's Guide to Vintage Beer" a lot of breweries used to use "caramel" to adjust for colour in mild and the like. I always wondered what he meant by that. He must mean one of the E150 colours (a or c?) listed here: https://en.wikipedia.org/wiki/Caramel_color

I think this could well work nicely as long as the flavour is not too artificial. Got to be worth a try.

got a bottle of O'Hara's Irish stout 500ml and added 1 ml of the Tesco salted caramel. It is about right as you drink the beer you notice the taste that is not too strong.

Interesting that you mentioned Ron Pattinson. When he came to do a talk on Scottish ales at our homebrew club, he said that Shilling Ales where brewed with pale malt only, but it was common practice to adjust colour at packaging with caramel, to meet customer expectations in particular regions. For example drinkers in Aberdeen may expect a darker beer than those in Glasgow.

And it was Caramel they used. http://barclayperkins.blogspot.co.uk/20 ... -1885.html

I brewed this again last week this time using white sugar to make the caramel. Took 3 attempts to not burn it but got there in the end. I bought some of the flavouring from Tesco and tried a few drops in a Stout and could not finish it. Seemed very bitter.

Let us know how the homemade caramel beer turns out. Interesting that the Tesco caramel was too strong. Must be a critical dose.
