Im keen on doing the Greg Hughes cascade single hop ale which uses (for 23l) additions at...
Start of boil 41g
20g for last 15min
20g for last 5min
63g at turn off.
The recipe boil time is 70min and approx 5kg grist.
My problem is the recipe assumes alpha acid of 6.6%. My cascade hops are 8.2%.
Any ideas on what i would to reduce by the fit the above?
Also i would use us 05 but have two dried yeasts from crossmyloof for kolsch and california common.
Would these work and if so, which of the three above would you use?
