Cascade pale ale advice..

Hi
I wonder if anyone can help with this problem.
Im keen on doing the Greg Hughes cascade single hop ale which uses (for 23l) additions at...
Start of boil 41g
20g for last 15min
20g for last 5min
63g at turn off.
The recipe boil time is 70min and approx 5kg grist.
My problem is the recipe assumes alpha acid of 6.6%. My cascade hops are 8.2%.
Any ideas on what i would to reduce by the fit the above?
Also i would use us 05 but have two dried yeasts from crossmyloof for kolsch and california common.
Would these work and if so, which of the three above would you use?

Use 16g in place of 20g

Use 50.4g in place of 63g

Thanks. I will do that. Appreciate it. Anyone have any views on the yeast? Im thinking us 05 or californian common- which i have never used.

I've used US-05 more often than not, never had a problem. It can result in quite a dry beer, especially if you've got lots of fermentables, but doesn't get in the way of the hops too much. Not used Californian Common, so can't comment on that one.

Yes i usually get good results with us 05. I have done a handful of all grain brews and only have experience of 04 and us 05. I'm curious about the cali common but without feedback I'm not sure. As mentioned above, i also bought the kolsch yeast. Does anyone have good recipe for kolsch brew using readily available hops? Thanks.

Californian Common will be a pseudo lager yeast. If you use then you should ferment at a lower temp than usual, about 17c

Ok thanks. I have a heat pad but no fridge to control temperatures below ambient. I think us 05 will be the best option here..

I've got some US Pale from crossmyloof. Not used it yet though. Looking to use it as a US05 alternative.

I did this recipe last Friday smelt fantastic in the FV at the end.

Alexlark, I ended up using the yeast you mentioned. I didn't make a starter, but just pitched it directly into the FV and had activity within two hours. It is looking good at the moment.

I’m a bit puzzled why you are only recommending changing the late hops because of a higher AA. The late hops are for flavour and aroma. The higher AA wont make much difference to the Ebu (well the 15 min adition will by about 2 ebu) It’s the bittering hops that need to be re calculated for the higher AA.
I would suggest to keep the balance of flavour, aroma and bitterness, only change the 70 min start of boil hops to 31g.

Its an excellent yeast and clears quickly. The Kolsch yeast is very good as well but not tried a hoppy beer with it yet.

I got a Citra and 7C's pale ale planned. Haven't heard anything bad about it.

The 7C`s should be a Good `un! :D
At the Homebrew Fest this year, Rob from `TheMaltmiller` had one on the bar. It was BLM.
My daughter picked out 4 of the C`s from taste and aroma (good girl, well trained).
Talked to Rob and he told me the other 3, one was Simcoe! :D
He said he spells Simcoe with a `C`.
All good fun! :D

Cimcoe mun! Lol

I've had them in the freezer for a while, had them from Geterbrewed a while back when they did the giveaway. The 7C's and Citra are not going in until the last 10 mins. This one will be drunk fresh!
