Kolsch recipe check

Planning on doing a kolsch does this recipe look ok

4000 pale malt
250 wheat malt
Mash at 66

35g hallertau hersbruckers at 90 mins
15g hallertau hersbruckers at 15 mins

2 sachets of cml kolsch yeast at 15 c for 6 days then bump to 20 c for 3 days then crash chill for 5 days

Does this look ok

The CML yeast is great. And it will ferment even lower than 15c. I have found if you want a crystal clear beer its best to use finings once it gets close to zero. I have only ever used lager malt or extra pale so i cant say about the colour from pale malt. Also i think it benefits from a flamout addition. Normally i use noble hops but have made lovely beers with USA as well.

I can put more in at flame out. I think wilkos do a finings agent might try that

I have some but not tried it yet. I have only used "beer brite" which works really well.

The two beers I've just done with the CML kolsch yeast are pin bright within a week of being bottled using only a step mash, irish moss, reasonable amounts of calcium and a couple of days chilling at about 4c. Well impressed with its flocculation.

What temps did you go with your initial ferment hanglow

was fairly high at 19/20C. Should say they were in no way kolsch like beers, both more like brown bitters. Although one was hopped to buggery with hallertau mittelfruh :)
