11 litre recipe:

3.5kg Maris O, mash 65degs for 1 hour.
500g DME
40g progress at 60
20g EKG/saaz at 10
20gEKG/saaz at 0

Notts danstar at 19 degs
Age for a year.

So far so good, in the carboy thus weekend.

I am wondering though: Should i just leave or shall i ditch in the dregs from a rene cuvee lambic? Maybe some oak for barrel authenticity?

Your thoughts are, as always, greatly appreciated....
