New brew after a longish break

In the past I have stayed with extract brews but recently I have looked to combining extract and grain. I am not really geared for 100% grain hence the mix of both so I like to experiment in my brewing above all I like to keep things simple.

Latest is a mixture of dark crystal and Briess LME S04 Yeast and a base of Challenger hops.

3 Litre volume brew 250g dark crystal malt then 50 g of Challenger for 60 mins
Briess Malt to 10 litres simple tap water, cooled to 21C and added the yeast. Initial gravity at 1050.

I am looking to dry hop during fermentation and after for prior to bottling - I have the following hops in stock - any thoughts?

Green Bullet, Dr Rudi, Motukea, Williamette, Goldings, Boudica, Phoenix, Galaxy, Challenger

Dry hopped with 20g Challenger and 40g Galaxy on the 4th day of fermentation in a nylon bag, SG is around 1016 to 1018 so its proceeding nicely, temperatures are 18 to 21C no heating just ambient. Tastes good so far.

Still looking to add a hop aroma to the nose before bottling any ideas from the hops I have?

Dry hopped the brew with 30g of Goldings this morning, finned and will bottle tomorrow, final gravity has stayed at 1014 for 3 days now so its finished slightly higher than I expected 1010 to 1012.

Bottled it today tastes real good goody hoppy taste well pleased. Noted the thick yeast in the bottom of the FV, impressed with the way its dropped out.

nope no plans for scaling up, I have to restrict my intake heavily now health reasons sadly so 10 litres is ample. I am still drinking last years brews and tasty they are mmmmm
