Coopers stout

Post by Fletch » Fri Aug 14, 2015 6:49 am

I want to brew a stout using a coopers kit
However, I like to experiment, so want to tweak and fancy a chocolate oatmeal stout.

I have the following ingredients at hand

Coopers stout kit
Coopers pale ale kit (debating a toucan as an option)
Marris otter 500g (donated from an AG brewing friend)
Chocolate malt 900g (donated)
Cara Munich III 400g (donated)
Special B 300g (donated)
Dark Crystal 300g (donated)

Need to get oats, choc extract and maybe vanilla pods

Anyone give some advise on how and what to put together

Cheers

Going with this tomorrow

400g Maris otter
400g Oats
150g Chocolate Malt
50g each of Cara Munich III, Dark Crystal, Carapils.

Mash in 3litres of water at 67C for an hour in the oven

Sparge then boil for 1 hour
Add 80g of baker cocoa powder for last five with half a whirl flock tab.

Rapid cool in ice bath and add to FV.
Add coopers kit
Add 250g each of medium and dark DME
Top up to 20l then check OG
Add extra DME if require
Mix like crazy ala ditch's stout
Pitch kit yeast and ferment in water bath at 22c

Secondary on vanilla pods and maybe some more chocolate of some sort.

Small secondary on bourbon oak chips
And one on pulp strawberries

here is one easy drinking coopers stout....infact way to easy ;)

copper stout kit
1lb of golden syrup
1.5KG dark DME or 1.5Kg can of coopers malt extract
1 cup brown sugar, be generous ;)
20L water

4L hot water and the kit to dissolve, add the DME or LME and stir, add to FV, add 2L water, add golden syrup (wash out with small amount of boiling water) and add sugar, add rest of water, drop in paint stirrer in battery drill and batter for 5 mins+ till its all dissolved and air-ated.

Wait for the temp to drop (helps to used chilled water ( i use Tesco mineral water chilled in the freezer) to 22c then pitch yeast, keep fermenting temp at 24c, if you can.

It goes fast, OG should be over 1.050, around 1.054 or so, ABV when finshed 5.2% or so. Very drinkable, moresih.....infact very bad. ;)

Chocolate smell was amazing even before adding the Cocoa.
OG was lower than expected so added more malt an "some" brown sugar
Not sure what final OG was but as long as it tastes nice. Bubbling away nicely this morning in water bath at 22C

Think I messed up the mash. Was really hard to sparge cos of the oats, so don't think I got out what I should have. Hopefully will still be a good beer
