Do I just push the 3/8 beer line into the fittings? I can't see any other way of doing it and was a little worried about leaks from both CO2 and beer.

Yeah, so long as your 3/8 tubing is cut straight there shouldn't be any leaks, you can get little clips that lock the fittings closed if you are worried

Push the pipe in hard. You'll find it goes in so far with a fair amount of pushing but the final 10mm or so requires more strength. You'll see what I mean when you try. :)
