How to bypass thermostat on kettle element

A little out of my depth I fear....
I am making a boiler. Can anyone tell me how to bypass the thermostat on the kettle element. Is it safe to do this and just turn it on and off at the socket whilst watching the temperature? There is a rocker switch that switches the element on and off. Do I just need to fix this in the on position?

Yep that's what I do and it's fine.
As for disabling the thermostat, I carefully removed the two flexible metal things (on your kettle, one turns it off when in comes to a boil and one stops you boiling it dry) that trigger the switch. One of them is connected via a metal pin/screw that holds the unit together so be careful or it'll pop open and all the bits will fly everywhere! Behind each of these is a white (on mine at least) plastic pin, which you can pull out as well. That should sort it out!
