Aha! If you add a PID, you don't have to plan your start time as it will get to the right temperature and then hold indefinitely....so if you don't fancy an early start, you can just roll over, go back to sleep and it will still be there waiting for you when you do get up.

Now if only I can figure out a fully automated mashing in, sparging and boiling system I could have the beer brewed entirely while I sleep.....
