problems dispensing force carbonated sparkling wine

Post by bs3mdp » Fri Jan 08, 2010 1:35 pm

i made some elderflower wine in the summer and have let it sit since. i recently got a small 2 gallon keg which i have decided to fill up with elderflower wine and gas up with co2 to make a "champagne".

so here is what i did:
i put about 1.5 gallons of wine into the clean keg.
gassed it up to 50psi with co2
left it in the shed for 5 days (average temp is about 2 degrees C at them moment)

problem is i am having trouble dispensing it, i have two different taps, one for beer and another narrow one and both are dispensing foam and nothing else and this is knocking all the bubbles out of my wine!!!! :(

i have tried dispensing it at very VERY low pressure (i.e it only just flows out of the tap) and it doesnt help.

any suggestions? would changing the narrow piping inside the keg with a wider one help? im guessing the reason it is foaming is because it is picking up too much kinetic energy on its way out of the keg.

has anyone else tried this method for wine or something similar in the past?
