I have an Elitech controller for my fermentation fridge and I want to also use it to control the temperature of my HLT on brewdays.
I already have some 10k NTC thermistor probes which look like a cylindrical piece of steel 25mm long and 5mm diameter with a length of 2-core cable coming out of one end.
Obviously I need some kind of fitting which will go into a hole in the side of my HLT and then the probe will go inside that. I'm imagining it would be like a short SS tube which is closed off at one end with some kind of screw fitting at the other end.
Assuming they exist, could someone please point me in the direction where to get one. Otherwise I guess at a push I could make one out of copper plumbing bits and pieces. Thank you.

Without patience, life becomes difficult and the sooner it's finished, the better.

Looking at the pictures - yes exactly that
I guess "Thermowell" is the magic word that I'd never heard of!
What else would I need - just a 1/2" NPT nut and some king of sealing washer I guess...
