Well I have thought about making proper lids, but it seems unnecessary and its more stuff to store.

I'm sure that that was not the answer Guy was looking for. The question was "What do you ferment in your 500 litre vessels"

Liquid is recirculating, completely different in my opinion.

Not any thermometer just measures surface temp, you wouldn’t check your chicken is cooked with IR!
Thinking about this, the op does not say what they want it for. Recirculating mash, I absolutely agree.
The purpose matters.

I have a long glass scientific thermometer and a very long stainless thing. But the IR is still my goto, after my fingers.

Guy knows the answer if he thinks about it. 🤔

Did you say you made wine in this quantity in an earlier post, MB?

I'm just having trouble getting my head round everything you do! You make wine and beer, bread, pickles and kombucha. Did you once say you also make cheese?

So, come on, tell us. Do you run a small (or large!) business doing all these things. Or are you just a super-efficient individual?

Here they are. Simple wine fermenter.

I am a trained winemaker, beer came much later.

Not super human, I just study processes to be efficient and automate where possible.
Hence overnight brewing and FIK.

Have you got any piccies of one full and fermenting. Or even your own in situ wherever you ferment ?
This is just a screen shot from their website showing a 500 litre container for grape must not an FV. In fact all of their FVs are stainless

I wondered about that, I was somewhat concerned about letting yeast loose to have their way with a food in a plastic of that colour.

I can't help but feel a "you are just making this up" undercurrent here, but no matter.

There is no colour problems they are food grade.
I have 3 of these fermenters. Here is a white one in use...
For size reference on the right you can see the spear for the pump, it is 2.5" gutter pipe.

There is no lid or airlock, these are used with a sheet.

For completeness here is the electro-hydraulic press beside it. What a good purchase that was, saves soooooo much time & effort.

I also have 5 x 300l stainless tanks, but prefer plastic for fermenting.

I've got one of those sieves, so useful for straining hops as well :)

It's a good size, too. Keeps up with the flow.

You can get a few degrees difference depending depending on distance to the object too. This is because the measuring area increases the further away the gun is.

Useless.

And a quick note to the uninitiated - "Resolution" is not the same as "Accuracy"!

Resolution refers to the units of display, in the case above, a tenth of a degree - looks GREAT! The accuracy however (and it's not stated here), may be only +/- a whole degree (or worse), but the display will be to one decimal point. So it can be very misleading.
