thats the one i had Jim. its was freshly put on the beer engine in the bar i was in and i must say it was delicious!
only other of their beers i've tried was "wolf". if was from a bottle and i didnt think much of it. probably a different beer on tap though.

So what do you fancy makin'
Pennine Pale, Wolf or Wagtail.
The Pale looks nice, but The Wagtail looks more Jim's kinda brew.
I'm sure they'll both be good through a beer engine.

The Wagtail looks simple enough.
3.8% IBU :33 Target, Fuggles, Goldings. Malt : Pale Ale, Amber, Dark Crystal

The Pale looks to be something along the lines of.
Pennine Pale
34L @ 90%
4%
IBU : 45

Pale Ale 4.4kg
Vienna 200g
Munich 200g
Wheat 200g

32g Columbus 15aa 60mins
10g Cascade 5.7aa 15mins
10g Citra 13aa 15mins
10g Cascade 5.7aa 5mins
10g Citra 13aa 5mins
I’d suggest also adding 1ml Cascade Oil & 1ml Citra Oil in the pin just before tapping.
Feel free to tweak it.

I recon we’ll be using Cullercoats yeast eh.

That recipe brewed on my system with Cullercoats yeast would likely give 23 litres near 5% ABV at 60IBU. Could lead to quite a night.
A kilogram less of pale malt and just 20g of bittering hops would come close to the brewery's numbers, while my normal regime for a 4% beer is 3kg pale plus variants plus invert. However, I too would be content to go with the flow.
Without patience, life becomes difficult and the sooner it's finished, the better.

Oops I thought your pin was 36L instead of 36 pints.
That why I put a recipe for 34L.

I never thought you'd ask. :oops:

Has your son finished at Durham? I presume he must by now, seems a long time since. Did he ever catch any of those illusive stellar particles he was chasing?

That's an impressive memory, I'll tell him you remembered him.

Particles are still hypothetical but like any good academic "further research is needed".

He completed his PhD then he and his wife moved in with us for three months before eventually buying a house in the next village. He's working as a software developer (like I used to) and even working in Queen Square in Bristol (like I used to). Hey, I never knew I'd be a role model.

Being a role model comes easier to some than others, we've a son and two daughters and they are all beer drinkers. :D

Fine about your boy, glad to hear he's progressing well, so much more difficult these days. Give him my regards when you see him.

Our youngest daughter is of similar age and finding work has been difficult and good work impossible. Many of her peers left the area to find employment, some even the UK, while others have since returned due to rising debt. She's been living intermittently with us and away since leaving school, but now has a house and will marry early next year when my wife and I might finally retire. Not fully sure that's what I want to do.
