What Yeast for for an Old Tom Clone
Hi,Fellow Brewmeisters,
I'm Planning an Old Tom Clone. 8.5%ABV GW's recipe.
The only decision now is what yeast to use. My LHBS stocks Mangrove Jacks specialist yeasts, I'm considering two at moment.
M41- Belgian Ale.
M29- French Saison Ale.
But, I feel I should ask my fellow brewers for advice (the wealth of knowledge between us.)
Obviously a malty ale, with a high FG.
All Considerations Appreciated Absolutely.

The old Tom bottles are bottle conditioned but don't know if it's the primary stain. Our local Tesco's sell it.

Thanks Dennis, I've read-up on harvesting yeast from a bottle, but haven't ever tried it.

If you can get a bottle to harvest from, start off with a mini starter (about 200ml) using 1.020 gravity wort with a pinch of yeast nutrient. Ideally the starter wort would be sterilised using a pressure cooker. Leave the yeast sediment in the Old Tom bottle and pour the wort on top. Cap the bottle and give it a good shake. Pop the cap and cover with tin foil. Leave it at room temperature for about 5 days. Then step up the starter using 1.040 wort with a pinch of yeast nutrient.
If you can't get a bottle of Old Tom, use WLP007.

I'll be interested to hear how this goes. I previously read a post on another forum saying Robinsons pasteurise their bottles now; I think that may be incorrect but am not certain either way.

I'd avoid a Belgian or saison strain for this. Completely the wrong style for that.

Hi, Kev- yes I've heard a lot of brewers do.
Whether that's in the interests of good beer or to avoid "us types" harvesting I don't know!!
I do know that, I've been to Robinsons Brewery and they do make some lovely ale
Hi Serum, I was looking at those strains thinking I need something that can handle the higher alcohol levels, Have you a strain in mind?

I'd find some 1028. Not dry and not mangrove jack but good for old ales and good for high ABVs....
