I'm about to set my first saison style brew tomorrow.
The plan is to start it off at 20C and raise the temp to 30C over a week, and then keep it their for a week at least. However I'm likely to have to go away for a couple of weeks before the end of that.
Will it do any harm to leave the beer at 30C for and extended duration in primary?
I could always keep the temp high for as long as possible, then leave it to free drop while I'm away.
High temp during fermentation for too long?
High temp during fermentation for too long?
Litany For Beer
I must drink the Beer.
Beer is the mind-killer.
Beer is the little-death that brings total obliteration.
I will face my Beer.
I will permit it to pass over me and through me.
And when it has gone past I will turn the inner eye to see its path.
Where the Beer has gone there will be nothing.
Only I will remain.

I've not used Belle Saison, but I typically keep WLP565 at 28c for 2 weeks or so with no adverse effects.
