Triple hopped triple IPA

Hi,

I brewed the above beer on Sat, it's one of the brewdog recipes. It should get up to about 16% but the recipe says you need to used champagne yeast to get it to this, but start with beer yeast.

When do you think I should pitch in the champagne yeast? I was thinking about 10% but I've no idea and don't want to mess it up.

What yeast are you starting out with?
I've read posts claiming that high of an alcohol level with the chico strain. I think I'd give it a go first before using champagne yeast.
I'm just here for the beer.

Id imagine adding it around the point where your beer yeast hits plateau, most dont stand much above 9% i dont think
no facts behind that just a guess

I'm using Saf-05. Pitched 3 packets on top of a yeast cake of the same strain.

I've no idea myself when to add the champagne yeast but thought on the lines of when it all started to slow down a bit.

Still going strong today!

WLP099 is also very alcohol tolerant. Adding dextrose toward the end of fermentation (a few points above FG) along with your Alcohol tolerant yeast will give you high alcohol content without ending up with a cloying body.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

I've read it's best not to use champagne yeast with beer, although I can't remember why. I'd find an alcohol tolerant beer strain.
