Home Brewing is and should be a broad church, so I will rail at anyone saying 'mine is the way and the truth'.

Brewing is a well documented process, it isn’t based on opinion. Opinions differ in how best to achieve the procedures of the process at home. Leaving bits out doesn’t produce the best results. A secondary vessel has a real function and it doesn't have to be expensive, complicated or risky. If O2 is a concern, purge the air from the sanitised SV with CO2 evolved from primary fermentation. All that’s required here is a tap on the SV and some tubing.

My purpose in reading this forum and asking you guys for your ideas was to be able to produce the best acceptable product for myself with the knowledge and equipment I have, and then tweak the process using hints and tips given by you to improve the way it was done, and the end result.
I must say so far for me this has been successful and I now have understandings that, seven days ago, I was unaware of!

My opinion is that a secondary vessel is not a mandatory requirement to produce the best beer possible. That will only lead to a dilution of the O2, not an elimination of it - to completely purge you would need a sealable vessel to do a liquid purge. As long as the beer is racked with plenty of remaining fermentable extract it should be OK though.Brewing is a well documented process, it isn’t based on opinion. According to my nasal acid sensors, it's mainly CO2 in the SV after a couple days. It's quite painful to inhale the stuff. A lot of CO2 is released from the wort during transfer too. I haven't noticed any issues, even without purging the SV. I've got a Saison that's been in a secondary for about 6 weeks. It tastes fantastic and is ready to bottle.
