Stone share their Recipes

Post by phatboytall » Fri Apr 13, 2012 1:38 pm

If people haven't seen it, the boys at Stone gave away some fantastic insights to their recipes a while back for BYO magazine

Its old but i'd thought i'd share as its very interesting.

Are the recipes in the book different to those above? Which beers do they cover?

I just assumed the book would be a regurge of the above released stuff.

Interesting that the magazine states WLP02 yet the recent book has WLP07.

The recipes in the book say to use either. Stone use a propreitary English Ale yeast that falls somewhere between WLP02 and WLP07 in terms of characteristics, based on my conversations with Greg Koch and Mitch Steele.

The book has recipes for:

Pale Ale
Smoked Porter
Levitation
4th Anniversary IPA
6th Anniversary Porter
7th Anniversary Ale
8th Anniversary Ale
9th Anniversary Ale
12th Anniversary Bitter Chocolate Oatmeal Stout
13th Anniversary Ale
Lee's Mild
Heat Seeking Wheat
Old Guardian Barley Wine
Jolly Pumpkin/Nogne/Stone Special Holiday Ale
BrewDog/Cambridge/Stone Juxtaposition Black Pilsner
21A/Firestone Walker/Stone El Camino (Un)Real Black Ale
Dogfish Head/Victory/Stone Saison du Buff
Ballast Point/Kelsey Mcnair/Stone San Diego County Session Ale

It does not have a recipe for Arrogant Bastard (but I do).

The book is a great read and provides a good insight of the brewery and their methods. Full of inspiration I've already brewed my take on one of the Anniversary Ale recipes and I dare say I'll be trying a few others! And its not just about the beer either, the food recipes have given me a few ideas too - the Arrogant Bastard Ale onion rings are definitely on the to do list! :D

All Arrogant Bastard homebrew recipes are based on speculation and trial and error since Stone is very tight lipped about their recipe and will never reveal it. But, the "Can You Brew It Rebrew 2" is very close:

70% efficiency
6 gal batch
OG 1066
ibu 94.8
srm 22.5
90min boil
90% Pale 2 row (6.5kg)
10% Special B (730g)
Mash 148F
24g 85 min Chinook 13%alpha
24g 45 min Chinook
24g 15 min Chinook
24g 0 min Chinook

I rebrewed the Can you Brew it Arrogant B a while back, it was superb. Due to rebrew any week now.

The Guy from stone says on the phone that "they wanted to make a one malt, one hop beer, so its special b and chinook" the rest is just getting the quantities right.

I brewed this clone recipe once and most people who tried it said they actually liked it a lot better than AB. Nonetheless what ever clone recipe you try is probably going to be a great tasting beer even if it doesn't taste exactly like AB.
