Flaked Corn where to buy??
Hey all, I am looking to get back into Brewing as its been a year or so since my last Brew I am looking at my old Lager recipes and I see that I have used "Flaked Corn" previously but cant for the life of me remember where I bought it ?? Is it still available or is there an alternative??

A few of the HB shops will sell it, might be sold as flaked maize though

Polenta is ground corn (aka flaked maize). So if you only need a bit a local supermarket will probably stock it, or if you look in the international food aisles you might find Natco or Dunnes River Falls ground cornmeal.

Damn! I never thought of using polenta, I even have some in the food cupboard. Corn needs to be cooked in some way before you can use it. Flaked maize is already processed so can go straight in the mash. corn in the form of "grits" has to be cooked before you can mash it, I suppose polenta would come under the latter, any idea anyone?Jocky wrote:Polenta is ground corn (aka flaked maize). Edit:
I found an answer, depends on whether it has been processed before packaging, quick cook or not. So, once I run out of flaked maize I'll start using polenta. It's really cheap on the supermarket ethnic food shelf.

I've used ground Cornmeal with great results. You need to cook it and then add it to the mash with the rest of the grain. Google 'cereal mash'. I BIAB and it worked very well.
For lagers I did the same with cheap long grain rice.

So ft I understand it right, if you want to use polenta in place of flaked corn/maize, it should be the quick-cook variety. Is that right?

When you say quick cook, I just cooked it for 20 mins. I used plain cornmeal, it wasn't labelled quick cook.

I've been using polenta for ages, All I do is. It's a pain thou, but it can be done while getting other stuff ready.
plenty of cold water in a pan add polenta (I use 2lt water to about 40-50g of polenta) put it on the smallest ring and the lowest heat, stir frequently and add more cold water if you think it's gettting a bit thick. Check temp here and there. And lturned off for a bit at the temp that it needs a rest, 60c or what ever it needs as I can't remember right now. But I'm sure you can look it up.
Then warm it a bit more if needed, to what ever your mash water is? add it to the mash tun and add water, and grain
I usualy stir it in the mash water to disapate any lumps and also flush the pan with mash water.
I have been known to add ground rice as well as porrage oats to the same pan,,, although rice I do remember does need to be boiled so I stopped adding rice as it sort of made it difficult to boil with polenta and porrage.
They all have there place, but mabe I was just adding to many outcomes to the party.
