elderflower wine recipe?
Does anyone have a good tried and tested recipe for elderflower wine? I have done champagne in the past but want to give wine a go. i plan to do a 5 gallon batch

I've made both the champagne and the wine recipes from this site.
Both recipes are no-nonsense, basic and work well. They're even for five gallons.
I recommend you do 10 galls as it'll last nearly twice as long.

However it's not elderflower season atm, and personally I wouldn't recommend dried - there's just no comparison.
As the year has moved on, why not try the elderberry recipe.

my thoughts exactly, elderflowers were over several weeks ago. at the moment I'd go for a blackberry wine, although in London they're already coming to the end, we've had two large basins full already, so I have plenty in the freezer. it'll be while before the elderberrys are ready, and they do have a shed load of tannin in, so on their own they don't necessarily taste great, and need many years for the flavours to mellow out.

I've just been for a walk at lunchtime, and seen an elderberry tree, full of nearly ripe elderberries, so ignore my previous post about them not being ready yet. I would guess, further south, in the right location, you'll find some that are ripe enough to pick now.
