Mixing Saison Yeast - Wyeast 3724 and WLP 565.

HI there I am about to do an all grain version of the above. I have seen in a few recipes, and other sites, a suggestion of mixing the two different yeasts together. Has anyone done anything like this in the past ?

I've read about people mixing different strains, but aren't those two both the Du Pont strain?

I'm interested in the thread though, having only used the Belle Saison in my first saison. People say that it's similar to WY3711, and not the most complex in taste, so experimenting on the yeast next time is high on the list.

Done the recipie and has been fermenting away for well over a week now. O.G was 1064. So good efficiency from the grainfather.

I used both strains wlp and wyeast in the fermenter and started off at a temp of 22 it went off like a bullet.

Over the past week I have been increasing the temp to 28 then 30 with a continued strong fermentation.

Yesterday I noticed a slight lull in the fermentation and thought it could be the dreaded stall at or around 1030.

I took a sample from the brewmaster this morning and to my surprise its down to 1012. Will give it another few days but looks like it done.

Looks like using both strains and the high temp has worked. Will try and wash some if the yeast as it gets expensive using the two strains.

That's only 80% or so attenuation, I'd guess it's got a fair bit of a way to go yet. They tend to be notoriously slow to finish up

Ditto that. Some of the attenuation figures published are conservative. I would expect upwards of 85% from what I've seen in other folks' brews and my one saison, unless you had something odd about your grain bill. I assume you used starters for the yeast. I got 88% with Belle Saison in an all-malt brew and 67C mash. The last few points can take longer than the rest of the fermentation.

The stall is avoided by doing an open or semi open fermentation - take off any airlock you have until fermentation is coming to an end.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

Checked again today and the readings have not changed. I know this has a tendency to stall out at 1030 but it now at 1010 for a week now. Fermentation finished??

Maybe... but you said it was 1.012 on Saturday (4 days ago) in your earlier post, unless I've misunderstood (?) If it's moved 2 points since then, a couple more days wouldn't hurt.

How is it tasting, btw?

You are correct lol shift work and lost track of days. It tastes fantastic tbh and has to be one of the best brews I've done to date.

Yes. I would and I have. I don't think it takes many little saison yeasties to stick around and get the job done. Actually, I'm really pleased with the lack of sediment in mine, still with good condition.

Yes. Fine it too if you want a sparkling appearance. Neither will make any difference to flavour.

Took a sample from the brewmaster racking arm last night. Still at 1.010 so time to cold crash. Went to check up this morning and found it had been leaking overnight from the racking arm and I've lost around around 1ltr of beer gutted. So I had to transfer to plastic bucket first thing this morning. Just hope the additional racking into the bucket won't spoil things.Tasted good mind.

I'm thinking of washing the yeast as well as I put the two styles in. Any advice on that?
