I laid this Ginger Beer down today

2kg Root Ginger, frozen, defrosted and chopped up in food processor
4 x cinnamon sticks
12 x cloves
1 x Kg Granulated sugar
1 x Kg Brown sugar
1 x Kg Honey (after boil)
250ml Jif Lemon juice

Made about 30L

I used my twin element boiler for this, not a good idea as the hop strainer is useless for the root ginger and it got blocked after less than a minute. I had to get Booldawg JNR to hold a sieve over the FV whilst I tipped the wort into FV.

OG 1036, hoping for around the 4% mark as both my other Ginger Beer attempts have tipped the scales as heavyweigths! 8)

I boiled outside in the tipping down rain. Glad the muller rice pots/rain shields worked a treat; nearly 5kw of electricity in the rain isn't recommendable.

I've switched to Lemon juice rather than 'real' fruit due to reading on here about Lemon rind imparting harsh flavours.

Ouch thats a real nasty mix you got going there, I hope you prove me wrong!!! :(

Just had a cheeky snifter from the FV. *cough cough* Yes, thats a bit gingery :oops: And its still up at 1020 which is adding alot of residual sweetness. TBH it tastes lovely as it is, be good to stop attenuation there! It is every bit as flavoursome as Idris fiery Ginger beer. Using the Lemon juice out a bottle rather than real fruit is definitely a good tip picked up from either CB or Dr. Smurto. I've added 16 cloves before and it doesnt really come out massively in the final flavour.

The last batch I made was 1.2kg in 25L and it wasn't ridiculously harsh so I reckon I could get away with 2kg in 30L. TBH they dont have scales at Tescos to weigh the ginger so it was guess work. I only knew it was 2kg from the till receipt.
