anyone got or seen a recipe for leff brune ? i know its strong stuff but it would be nice to make .

You can buy them from hop and grape but they work out very expensive as they are sold as 'finishing hops' IIRR (ie small packets for lots o' cash). I was thinking the remainder of my Perle hops could be used in a leffe style beer, as they are high alpha acid. What do people think?Andy wrote:and Pride of Ringwood hops ?

A drink quite a bit of Leffe.
My understanding is that Leffe Blonde contains Maize though most recipes online don't seem to include it. Personally I'd go with pale malt, a touch of aromatic malt (5%) and a smidgen of sugar (5-10% of the grist). Hops probably Saaz to finish and something decent for bitterness (Perle, Goldings, Styrian) aiming for 25IBU - you don't want too much bitterness. The yeast is important - White Labs 575 works well in my experience.
I'd be very surprised if they use Pride of Ringwood. For one they're Australian and therefore cost a bit to import and second they don't actually taste that nice. I'd expect that they use hop extract anyway as many Belgian brewers do for bittering. If you want an economical bittering hop use Perle.
As for the Brune recipe that looks way too complicated for a huge megabrewery like Interbrew (who make Leffe) to be bothered with. The Brune tastes a bit one dimensional to me. I wouldn't be surprised if the two beers are pretty similar but the brune has a bit of caramelised sugar syrup or Carafa Special in it.
